It's actually a pretty fun thing to do, and could be something that could drive us to play UT more often again. What it is, is just a checklist of different objectives that you personally try and fulfill. There's no prize or anything for getting everything first, it's more of just trying to challenge yourself to complete... well, the challenges. Anyway, here's the list I have so far.

TIER 1 OBJECTIVES

WEAPONRY

(Mastery)
Hammer Novice: Get five kills with the Impact Hammer in one game
Enforcer Novice: Get five kills with the Enforcer in one game
Bio Rifle Novice: Get five kills with the Bio Rifle in one game
Shock Rifle Novice: Get five kills with the Shock Rifle in one game
Plasma Rifle Novice: Get five kills with the Plasma Rifle in one game
Minigun Novice: Get five kills with the minigun in one game
Flak Cannon Novice: Get five kills with the Flak Cannon in one game
Rocket Launcher Novice: Get five kills with the Rocket Launcher in one game
Sniper Rifle Novice: Get five kills with the Sniper Rifle in one game

(Spree)
Killing Spree: Earn a Killing Spree
Jackhammer: Earn a full killing spree using only your Impact Hammer
Gun Slinger: Earn a full killing spree using only your Enforcer
Bio Hazard: Earn a full killing spree using only the Bio Rifle
Combo King: Earn a full killing spree using only the Shock Rifle combo
Shocking: Earn a full killing spree using only the Shock Rifle
Shafted: Earn a full killing spree using only the Plasma Rifle
Vulcan: Earn a full killing spree using only the Minigun
Flak Junkie: Earn a full killing spree using only the Flak Cannon
Rocket Scientist: Earn a full killing spree using only the Rocket Launcher
Head Hunter: Earn a full killing spree using only the Sniper Rifle

SURVIVALIST

Efficient: Earn more kills than deaths in a match
Roughing It: Earn a killing spree without ever picking up health or armor
Medic!: Endure damage equal to or more than 50% of your health in one hit, then kill your attacker
Hard Landing: Fall far enough to take more than 30 HP's worth of damage
One In the Chamber: Kill an opponent with the last round in your weapon
Tough to Kill: Survive damage from the Rocket Launcher while wearing Armor

COLLECTION

Kleptomaniac: Pick up 10 or more weapons dropped by dead enemies that another player killed
Armed to the Teeth: At any point in time, hold every available weapon on a map (regular weapons only)
Stimulated: Max your health at 199
Power Hungry: Obtain a Powerup of any type

COMBAT

Killer: Earn a kill
Airborne: Kill an enemy while in the air
Dead Check: Explode 10 corpses in a game
Overkill: Explode a player upon killing them
Catch!: Kill an enemy with a single grenade from the Rocket Launcher
Shot Down: Kill an enemy who is airborne
Showdown: Kill an enemy who is using the enforcer, with the enforcer
Phantom: Kill an enemy while Invisible
Gray Matter: Kill an enemy with a Headshot

OBJECTIVE

Flag Capture: Capture a Flag
"Flag Taken!": Steal an enemy flag five times during a match
Domination: Have your team control every control point during a game of Domination
Pointman: Complete an objective in Assault

PERFORMANCE

Victor: Win a match
Rough Day: Have the most deaths in a match
